Egg, Spinach and Quinoa Breakfast Scramble
A healthy breakfast doesn’t have to be complicated or take forever in the kitchen. This is one of my favorite weekday morning healthy breakfast recipes that’s quick, easy and tastes delicious!
1/2 TBSP olive oil
1 tsp minced garlic
1 TBSP milk
pinch of salt and pepper to taste
1 cup spinach
1/4 cup quinoa, cooked
1 tsp grated Parmesean
Heat oil in a skillet on medium-low heat.
Cook garlic for one minute.
In a bowl, whisk eggs, milk, salt and pepper.
Add spinach to skillet.
Cook for 30 seconds.
Pour egg mixture in skillet.
Let sit for 10 seconds.
Beat eggs quickly toward the center of the skillet.
When nearly cooked through, add cooked quinoa.
Mix well and top with parmesan cheese if desired.
